chore: update configuration and docs

Description

This PR includes:

• use VitePress v2: added pnpm.overrides at root package.json to force to use v2 alpha 16
• fixed maskable pwa icon (typo when refactoring the repo => should be maskable instead mascable)
• updated org-image.png and included 2 webp for pwa screenshots (form factor wide and narrow)
• use Bundler at docs to fix some TS erros for llm plugin
• added proper manifest.webmanifest content-type for nginx (being served with application/octet-stream)
• added fill: 'forwards' for view transition when switching theme (broken at FF)
• added / prefix to any pwa icon (pwa icons and screenshots)
• use vitepress at docs sitemap.ts module
• move .npmrc stuff to pnpm workpace yaml configuration: included sharp via pnpm approve-builds and excluded @parcel/watcher and esbuild
