Migrates from pnpm v10 to pnpm v11. To fix some trust policy issues, also updates a couple dependencies which were either outdated (biggest example is
vite@7>>vite@8), or were lagging behind the rest of the repo (@types/node@22>>@types/node@24).In a future PR, we should add more shared dependencies (e.g.
@types/node) to the pnpm catalog.
