Refactor environment configuration and switch CI to Conda

[google-labs-jules]

This PR updates the conda environment files to be more flexible by removing the fixed name field and commenting out strict python version constraints. It also updates requirements.txt to pin numpy to avoid compatibility issues with psychxr.

Additionally, the GitHub Actions workflow docs.yml has been updated to use conda-incubator/setup-miniconda using the updated environment files, replacing the previous make/pip based setup.

Changes:

• Modified environments/*.yml: Removed name, commented python.
• Modified requirements.txt: Pinned numpy.
• Modified .github/workflows/docs.yml: Switched to Conda for dependency installation.
