refactor(schematics-core): remove Jest and test configs

What is the current behavior?

schematics-core has jest and test config.

What is the new behavior?

Remove the files to remove the jest dependency, and because there are no test I also removed the test config files.

Does this PR introduce a breaking change?

Other information

The copy task is also changed to remove files to ensure a clean copy.
