Bump vite-plus and related packages to alpha 0.1.21-alpha.6.

Updated where applicable:

  • vite-plus
  • vitest (alias to @voidzero-dev/vite-plus-test)
  • vite (alias to @voidzero-dev/vite-plus-core)
  • overrides / resolutions / pnpm.overrides / pnpm-workspace.yaml catalogs

The dependencies @voidzero-dev/vite-plus-core and @voidzero-dev/vite-plus-test (along with vite-plus at line 48) are duplicated in another block starting at line 62. This redundancy should be resolved by keeping these dependencies only in the appropriate section (likely dependencies for this package, given it is a development toolkit).
