We dont need to add Changelog for the RC version. Just add for the 1.8.0 version. Also remove the RC part from the Readme.md

Hey guys, Could #418 make it to 1.8.0 ? We had to fork the lib to be able to use it with one of our customers. Impact is the library is not usable (it crashes) without the patch for low message volumes with slow consumers. Thank you! |

This pull request prepares the codebase for the
1.8.0-rc1release candidate ofconfluent-kafka-javascript, updating dependencies, version numbers, and documentation to reflect the new release and its reliance onlibrdkafka v2.13.0-RC1.
