Update bindings code to match REST API changes

Summary

We are supporting AI Gateway websockets in the bindings code as well, which requires a few changes. You can see corresponding changes in the sdk repository for the REST API, but basically, when we find an AI Gateway model, we want to build the query parameters differently to match the expected shape for AI Gateway.
