Replaces the Using Protenix guide with Using Protenix-v2 (the enhanced-capacity successor), mirroring how the ESMFold2 guide replaced ESMFold.

  • Using_Protenix.ipynbUsing_Protenix-v2.ipynb: retitled, intro describes the 464M-parameter variant, uses session.fold.protenix_v2 / ProtenixV2Model, and executed against dev (real Protenix-v2 outputs).
  • New bottom section "Using the original Protenix" pointing at session.fold.protenix (model id protenix) for reproducing earlier results.
  • structure-prediction/index.rst repointed; fixed the inbound link from Using_ESMFold2.ipynb.

SDK support landed in openprotein-python-private#229. The ProtenixV2Model autodoc/:py: xrefs render as plain text until the docs openprotein-python pin is bumped to a release containing #229 (known autodoc-gating, non-failing — same as ESMFold2 initially).

Part of OpenProteinAI/backend-worker-protenix#2 (docs row).
