Fix processing.json files in derived data

Two issues emerged when looking at the processing.json outputs with @tmchartrand:

1. I failed to fill the processing.data_processes.version field. This should be the release version of the capsule that produces the data
2. The processing.data_processes.input_data field is null. This should be either the input data name or the s3 URL. I need to fix this.
