Bump version to 1.8

Version 1.8 includes:
- Fluent design system integration with ThemeMode support
- Modern UI with dynamic theme colors (light/dark mode)
- DropShadowEffect for enhanced edge light glow
- Updated control window with Segoe MDL2 Assets icons
- Windows 10 and Windows 11 compatibility
- Improved UpdateDialog with Fluent styling
