Bit7z should already support v25.00 because the APIs provided by 7-Zip's DLLs haven't changed.
Based on my tests, the library works just fine.
You can also build bit7z for a specific 7-Zip version using the -DBIT7Z_7ZIP_VERSION=25.00 CMake option.

As a side note, the 7-Zip interfaces have been pretty stable for a long time, at least on Windows. Therefore, the version of the 7-Zip DLL is usually not important, except for supported features, improvements, and bug fixes in 7-Zip.
In other words, you can build bit7z for any version of 7-Zip, and it should work with any version of the DLL at runtime.
However, I usually recommend using the same version to play it safe.

On the other hand, the interfaces had some breaking changes from v22 to v23 on Linux, but have been stable since then.

I had it compiled for 24.09 already when I updated to bit7z 4.0.9. The reason I am asking was this change:

• 7zip for Windows can now use more than 64 CPU threads for compression to zip/7z/xz archives

Do you perhaps know whether this needs some enabling via additional switches or is it transparent?

From what I understand, it should be transparent.
In bit7z, you can manually set the number of threads via the setThreadsCount method.
