EURO_OFFICE_JWT_SECRET doesn't appear to be used

I don't think the EURO_OFFICE_JWT_SECRET variable is used anywhere. I was expecting to see it supplied to one of the containers in the same way SMTP_PASSWORD is (as an example).

Is this a bug or is the secret not required?

I got it running locally after I posted this, I'll raise a PR over the next few days. I believe it just needs to be added as an env var so it's a small change.
