[instrumentation-mongoose] TAV tests failing for `mongoose@8.21.0`

TAV tests are failing for mongoose@8.21.0, the error indicates that telemetry (statement info) is missing. I think it may be related to the fact that mongoose is now calling different methods internally (this only seems to happen when operating directly on the Model).

Ah, looks like the Query is not fully configured yet when Query.exec() is called. Our expectation is wrong that Query.exec() will always use a fully configured Query. It can be modified in the execPre middleware which run during the Query.exec().

I'll open a PR.
