Would it be possible to reduce the docker image size?

Yes, it is possible. However I believe this repo is not being maintained anymore. I made a PR on a repo that is forked from this one that reduces the image size to approximately 700MB, it hasn't been merged yet though.

i could eventually fork it and try to maintain it and maybe a sort of web ui

There is a more recently maintained version: Subsyncarr Plus, which also has a web ui. I can recommend looking at it.
