Have tried multiple times to install and it won't run properly.

Jellyfin team should release the fix, use this if you want to run it right now -

udocker rm jellyfin-server; udocker pull jellyfin/jellyfin:10.10.7 && udocker create --name=jellyfin-server jellyfin/jellyfin:10.10.7

And then -

~/Termux-Udocker/jellyfin.sh
