Paths containing characters like `é` are not handled correctly

A recent issue in grisp grisp/grisp#156 shows how our plugin fails at building a valid overlay.
There is a bug related to the paths handling, in particulare the letter é...
Editing the path and replacing the letter makes the problem disappear.

This is the diagnostic run:

We need to investigate what exactly is failing, this has been replicated only on Ubuntu 24.04.1 for now.
