`process` is not defined

Upgrading to v6 in https://github.com/freeCodeCamp/exam-env shows the following breaking error on any page load:

Uncaught ReferenceError: process is not defined
    at bundle.es.js:22:3302

For some reason process has been included in the build. I assume this is not caught in freeCodeCamp/freeCodeCamp, because Gatsby shims process.

There is only two places process is used.

ui/utils/gen-component-script.ts

AND

ui/rollup.config.mjs

Line 12 in a0844ae

const production = process.env.NODE_ENV !== "development";

Is gen-component-script.ts part of the bundle or is it trying to read process.env.NODE_ENV? If it's the latter, could mocking it using the Vite config be enough?
