Vedo seems like it's a bit simpler but still powerful. It was recommended by @birocoles a while ago. I see that they have many backends for running on Jupyter, in particular k3d which bypasses VTK and all of that mess entirely.
It's worth considering replacing our 3D plotting to this instead if it's easier to install and run successfully on CI (and actually get interactive 3D plots in the docs).
