release.yml Should Run on arm64

by default, any image created cannot be used on arm, meaning anyone using Snapdragon X Elite or Apple M series CPUs will not be able to pull containers from ghcr built using this release.yml. One could argue that devcontainer/action is responsible to ensure the publish occurs on both arch's

I will be following https://github.com/home-assistant/devcontainer/blob/c1479dcf6b8b55e2cdfaba53515fe547d5acd08a/.github/workflows/builder.yaml#L50 to ensure I get images for both platforms
