feat(client)!: update to new `jsonrpc` dependency and use `bitreq` instead

Describe the enhancement

Once the new version of jsonrpc is released, we should bump it's version here and update the Client to use it with bitreq instead of minreq.

Use case

Ideally we should use the latest version for jsonrpc, which will support bitreq as the HTTP client.
