docs: v1.6.2 — complete menu, help, and README consistency update

- README.md: full rewrite covering all 22 CLI flags, 6 scan profiles,
  12 security checkers, 7 downloadable modules, risk scoring, scan
  history/diffing, complete project structure with all 25 core modules
- netwatch.py: expanded --help with scan profile table and 15 examples;
  new menu options for IoT scan, SMB scan, Full Assessment, Scan History,
  Modules; helper methods for new menu actions
- config/settings.py: MENU_OPTIONS expanded from 9 to 13 entries
  covering all features; version bumped to 1.6.2
- ui/menu.py: help text rewritten with all 6 profiles, all 12 security
  checkers, severity levels, and key CLI commands
- ui/interactive_controller.py: added Full Assessment, Modules & Data,
  IoT/SMB bulk scans; implemented scan history viewer, scan diff
  comparison, working HTML/JSON export; replaced stub methods
- core/network_utils.py: WSL detection — reject 172.x virtual adapter
  IP and fall back to 192.168.1.0/24 default
