MkDocs v2 bringing breaking changes

as per Material for MkDocs: https://squidfunk.github.io/mkdocs-material/blog/2026/02/18/mkdocs-2.0/, the way we currently run our docs is going to break with v2 as it seems MkDocs is moving to a pretty closed down model that doesn't support plugins.

Not sure how we want to pivot here, if we want to ride the waves with v2 of MkDocs or find an alternative. In times prior I've only used Sphinx which isn't nearly as pretty hahaha

Long term I think https://github.com/zensical/zensical looks most promising. Created by the people who developed Material theme.

Short term we could switch to https://github.com/ProperDocs/properdocs, a MkDocs v1 clone. That is a drop in replacement, just some bug fixes on top of MkDocs v1 from what I understand. All plugin for MkDocs just works.
