java support?

Hey.

I might be dumb, but I fail to get mvn, jdk21, and plantuml support into the container. I have created a Dockerfile with all I needed, but then I failed to set that local image as default. I might have missed it in the doc, though. I only found setting the tag.

Looking at the docker/images.json. That would be perfect for local extension. But it is only for releases I assume.

I could start editing the scripts, but that would make upgrades a nightmare.

Could we have a way to use a local image, so we can provide more tools to the clanker?
