Spike: Product Analytics - Abstract integration to support a pluggable destination

We currently use Amplitude for Product Analytics. We want to enable ourselves, and our customers, the option to use other analytics platforms for tracking product usage.

The goals of this spike:

1. Understand the existing Amplitude implementation
2. Plan the work that is needed to implement a pluggable architecture for product analytics
3. Estimate effort for implementing the above + migrating our existing Amplitude implementation to a pluggable structure.
