Gap Limit missing on Desktop, Coin Control missing on Mobile #301

Problem
Neither platform has both features:

This is a problem for merchants using integrations like Boltz, which generate many receiving addresses. On Desktop you can't see all funds (no Gap Limit), and on Mobile you can't choose which UTXOs to spend (no Coin Control).
Request
Add Gap Limit to Desktop and Coin Control to Mobile for full feature parity.
